    Hello,

    I tried a salt pork recipe I saw in an earlier thread. It's been sitting in a container of salt and salt brine for 2 months. Is this long enough? Should I continue to keep it in a fridge or will it turn bad if I take it out? Advice please!

    Hey Jason, in my experience two weeks is plenty of time. I have done the refrigerator method and even just left it sit in the vessel on the counter top and never had an issue.
    With that, I think you are good to go my friend.

      Hey Tyler,
      Should I keep it in the fridge until I use it then? I don't really have any events coming up till later next year!

        If it is still covered with brine you can store it in a cool place. Fridge should not be necessary.

          Jan is correct. Keep it in the brine in a cool area until it's ready for use and it will be good to go when you pull it out.
