Light-weight wool (today called tropical) and Medium-weight linen seam to be the most popular. Also, lighter colors feel cooler to most folks than dark ones, so lighter colors were more popular for summer use.
I'm sure someone will be along shortly to quote you chapter and verse.

I was at the Confederate Museum in Charleston this past week and one I saw there had stripes on it like ticking.

I've seen originals in wool flannel and cotton drill. I do not doubt that some could of been produced in ticking. Were there any details listed with that suit? What you might do is grab up a few period newspapers produced in summer months and check the ads. I know I have a several Harper's Weekly editions that are advertising shirts...they sometimes give great detailed descriptions.
